Possible Orchard Pork

Think it's impossible? No apples to core, peel, or slice, but still the fresh taste of the orchard shines through. How? Just look at the last ingredient...that's what makes it possible.

What You'll Need

  • 1 1/2 pound boneless center-cut pork loin, cut into 1/4-inch julienne strips
  • 2 green or red bell peppers, cut into 1-inch strips
  • 1 onion, cut into 1-inch strips
  • 1/2 of a head of broccoli, cut into florets
  • 1/2 cup teriyaki sauce
  • 2 tablespoon honey
  • 1/2 teaspoon ground nutmeg
  • 1 cup chunky-style applesauce

What to Do

  1. In a large skillet or wok that has been coated with cooking spray, brown pork over medium-high heat 4 to 6 minutes, stirring frequently. Add peppers, onion, and broccoli. Cook 3 to 4 minutes or until no pink remains in pork.
     
  2. In a small bowl, combine remaining ingredients; mix well. Reduce heat to medium and add applesauce mixture to skillet.
     
  3. Toss to coat pork and cook an additional 2 to 3 minutes, or until sauce begins to thicken.
     

Notes

For an extra special taste, sprinkle 1/4 cup chopped pecans over the top before serving. And you can give it a festive look by using one red and one green bell pepper.
