Baked Mashed Potatoes

This hearty dish is the perfect side for any Sunday dinner. When you're expecting a big bunch, you'd better make an extra batch 'cause they go quickly!

What You'll Need

  • 6 potatoes, peeled and cut into 1/4-inch slices
  • 1/2 cup Italian-flavored bread crumbs
  • 1/2 cup (1 stick) butter, softened
  • 1/4 cup sour cream
  • 2 eggs, beaten
  • 2 tablespoon chopped fresh parsley
  • 1 1/4 teaspoon salt
  • 1/2 teaspoon black pepper

What to Do

  1. Preheat oven to 450 degrees F. Coat a large baking sheet with cooking spray.
     
  2. Place potatoes in a soup pot and add just enough water to cover them. Bring to a boil over high heat and boil 12 to 15 minutes, or until fork-tender; drain and place in a large bowl.
     
  3. Mash potatoes slightly and add remaining ingredients; mix well. Shape into 12 balls and place on baking sheet.
     
  4. Bake 15 to 18 minutes, or until light golden.

Notes

Make these your own by mixing finely chopped onions, garlic, or even shredded cheese into the potato mixture before baking.
