We've perfected this recipe in our Test Kitchens to resemble the fries you get at carnival booths. Now all we need to do is buy a small pushcart, don a red-and-white striped shirt, and go into business for ourselves...or just enjoy the fries at home with the family. That's a lot easier!

What You'll Need

  • 3/4 cup seasoned bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 medium potatoes, peeled and cut into 1/2-inch strips
  • 1/3 cup butter, melted

What to Do

  1. Preheat oven to 450 degrees F. Coat a large rimmed baking sheet with cooking spray.

  2. In a shallow dish, combine bread crumbs, Parmesan cheese, salt, and pepper; mix well.

  3. Dip potato strips in melted butter then in bread crumb mixture, coating completely.

  4. Place on baking sheet and bake 20 to 25 minutes, or until golden and crispy, turning halfway through cooking.

Notes

These can be prepared ahead of time and baked for half the amount of time needed. Then, just before we're ready to serve the fries, finish the baking.
