Garlic Mayonnaise

I call this "mayonnaise with just the right zest"!

What You'll Need

  • 3 garlic cloves, peeled
  • 1 egg
  • 1 tablespoon lemon juice or white wine vinegar
  • 1/2 teaspoon salt
  • 1 cup olive oil

What to Do

  1. Place the garlic, egg, lemon juice, and salt in a blender; blend until smooth. Continue blending, slowly adding the oil to the blender; blend until the mixture thickens like mayonnaise.

  2. As with any dish containing raw eggs, be sure to store it in the refrigerator until ready to use.

  3. Makes about 1 cup.

Notes

NOTE: If you have any concerns about using a recipe containing raw eggs, then skip this one.
