Scallops in Vermouth Cream

Vermouth is a white wine that is flavored with herbs and spices. Save our Scallops in Vermouth Cream for when you want to do something special for that special someone.

What You'll Need

  • 2 tablespoon all-purpose flour
  • 1 pound sea scallops
  • 2 tablespoon butter
  • 1/4 cup dry vermouth or other white wine (See Note)
  • 1/2 cup whipping cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

What to Do

  1. Place flour in a shallow dish; toss scallops in flour.

  2. In a large skillet over medium heat, melt butter. Add scallops; cook 4 to 5 minutes, or until they turn white throughout and are golden on both sides, turning occasionally. Remove scallops from skillet.
     
  3. Add vermouth to skillet, stirring to loosen bits from bottom of skillet; bring to a boil. Cook 2 minutes or until vermouth is reduced by half. Stir in whipping cream, salt, and pepper; reduce heat to low. Add scallops; cook just until thoroughly heated.
     

Notes

Add some crusty bread or rice to soak up this rich vermouth cream!
