Slow Cooker Chicken Chow Mein

Our Slow Cooker Chicken Chow Mein cooks up all day, so that by the time you're ready to sit down and eat the house smells incredible and dinner is ready to be served. This is a family-favorite, so be sure to save this one!

What You'll Need

  • 8 boneless, skinless chicken thighs, cut into 1-inch chunks
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 carrots, sliced diagonally
  • 1 celery stalk, coarsely chopped
  • 1/2 cup chopped onion
  • 3 clove garlic
  • 1 cup chicken broth
  • 1/4 cup soy sauce
  • 1 teaspoon ground ginger
  • 2 tablespoon cornstarch
  • 3 tablespoon water
  • 1 cup sliced fresh mushrooms
  • 1 cup snow pea pods

What to Do

  1. Coat a large skillet with cooking spray and heat over medium-high heat. Sprinkle chicken with salt and pepper; cook for 5 minutes, or until browned, turning once through cooking.
  2. In a 5-quart or larger slow cooker, place carrots, celery, onion, and garlic; top with chicken.
  3. In a small bowl, combine broth, soy sauce, and ginger; mix well and pour over chicken. Cover, cook on LOW heat for 6 hours.
  4. In a small bowl, whisk cornstarch and water until smooth; stir into chicken mixture. Stir in mushrooms and pea pods. Cover and cook 20-30 minutes longer, or until vegetables are tender.

Serving Suggestion

This is great served over white rice and garnished with chow mein noodles!
