Squashed Dressing

Serve this dish as a new alternative to your holiday side dishes. Our Squashed Dressing is a tasty cross between a squash casserole and cornbread dressing. And as an added plus, it frees up valuable oven space!

What You'll Need

  • 2 pound yellow squash, cut into 1/4-inch slices
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 1/4 cup butter, melted
  • 5 cup crumbled cornbread, reserve 1 cup
  • 1 (10-3/4-ounce) can cream of chicken soup, undiluted
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. In a 5-quart, or larger, slow cooker that's been coated with cooking spray, combine all the ingredients except reserved cup of cornbread; mix well. Sprinkle reserved cornbread on top of squash mixture.
     
  2. Cover and cook on HIGH setting 3 hours or until lightly browned. Let stand 15 minutes before serving.
