Quick Vegetable Soup

Taking the mystery out of making homemade soup in a snap is just one of the many tricks I have up my sleeve!

What You'll Need

  • 2 (10.5-ounce-each) cans condensed chicken or beef broth
  • 2 soup cans of water
  • 3 cup frozen mixed vegetables or medium-diced fresh vegetables of your choice (such as carrots, peas, corn, etc.)
  • 1/2 cup uncooked small pasta (such as orzo, ditalini, or acine di pepe)
  • 1 tablespoon dried parsley flakes

What to Do

  1. In a medium-sized saucepan, combine the broth and water over high heat.
     
  2. Add the vegetables and bring to a boil. Stir in the pasta and parsley, then reduce the heat.
     
  3. Cover and simmer for 15 to 20 minutes, or until the vegetables and pasta are tender.

Notes

You can even add some leftover cooked pasta instead of the 1/2 cup uncooked pasta. (About 1 cup cooked pasta will do.)
