Roasted Garlic-Potato Soup

Garlic potatoes are my favorite. And now I can have garlic potato soup in a snap! I must be in heaven!

What You'll Need

  • 2 cup milk
  • 1 1/2 cup water
  • 1/2 (7.6-ounce) package roasted garlic instant mashed potatoes
  • 1 cup (4 ounces) shredded sharp Cheddar cheese, divided
  • 1/4 teaspoon freshly ground pepper

What to Do

  1. Combine milk and water in a large saucepan; bring to a boil. Remove from heat; add potatoes, and stir with a wire whisk until well blended.
     
  2. Add 3/4 cup cheese, stirring until cheese melts. Spoon into 4 bowls; sprinkle with remaining 1/4 cup cheese and the pepper.
