Mediterranean Turkey Salad

For a refreshing spin on an old favorite, this Mediterranean Turkey Salad has got it all. Cherry tomatoes, black olives, and turkey cutlets make this one a Mediterranean medley of flavors!

What You'll Need

  • 1/2 cup olive oil, divided
  • 4 turkey cutlets (about 1 pound)
  • 3 scallions, sliced
  • 1/4 teaspoon black pepper
  • 3 tablespoon wine vinegar, divided
  • 1 teaspoon Dijon -style mustard
  • 2 tablespoon mayonnaise
  • 1 cup cherry tomatoes, cut in half
  • 1/2 cup black olives, rinsed
  • 2 tablespoon chopped fresh parsley

What to Do

  1. In a large skillet, heat 2 tablespoons of the oil over medium-high heat; add the turkey cutlets and saut until lightly browned and no pink remains, about 5 minutes on each side.

  2. Cool and cut into cubes. In a large bowl, combine the turkey cubes with the scallions and sprinkle with pepper.

  3. In a small bowl, mix 2 tablespoons of the olive oil and I tablespoon of the wine vinegar; stir into the turkey mixture and marinate, covered, for 15 minutes in the refrigerator.

  4. Meanwhile, in a small bowl, whisk together the mustard, mayonnaise, and remaining oil and vinegar. Pour the mustard-mayonnaise mixture over the marinated turkey and stir. Add the cherry tomatoes, olive, and parsley; toss.


Notes

Serve over romaine lettuce leaves.
