Broccoli Souffle

Broccoli Souffle makes a tasty main dish or a delightful brunch. It goes especially well with beef or fish.

What You'll Need

  • 1/4 cup (1/2 stick) butter
  • 1 small onion, chopped
  • 1/4 cup all-purpose flour
  • 1/2 cup hot water
  • 8 ounce (1/2 of a 16-ounce package) processed cheese spread, melted
  • 3 eggs
  • 3 (10-ounce) packages frozen chopped broccoli, thawed and well
  • 2 tablespoon Italian-flavored bread crumbs

What to Do

  1. Preheat oven to 400 degrees F. Coat an 8-inch square baking dish with cooking spray.
     
  2. Melt butter in a medium skillet over medium heat. Add onion and sauté 2 to 3minutes, or until tender. Remove from heat and add flour; mix well.  Add hot water and stir until well blended.
     
  3. In a large bowl, combine cheese spread, eggs, and chopped broccoli. Add onion mixture; mix well.
     
  4. Pour into baking dish and sprinkle with bread crumbs.  Bake 25 to 30 minutes, or until heated through. Cut and serve.
