Country Corn

Our Country Corn recipe is as simple as it sounds, even with chopping the corn first. Know why we have to do that? Well, let's just say that it makes the corn taste sweeter and creamier than you could ever imagine.

What You'll Need

  • 2 (16-ounce) packages frozen corn, thawed
  • 6 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. Process each package of corn separately until coarsely chopped in a blender or a food processor that has been fitted with its metal cutting blade, scraping down the bowl as needed (see Note).

  2. Transfer to a large saucepan and add the remaining ingredients. Cook over medium heat for 6 to 8 minutes, or until heated through, stirring constantly.

Note

If using a blender, process in stages for just a few seconds at a time, making sure to scrape down the container several times while processing so that all the corn is coarsely chopped. But don't overdo it or you'll end up with mush!
