Parmesan Zucchini Sticks

Need a lighter alternative to french fries that'll still leave everyone smiling? Our Parmesan Zucchini Sticks have got the crispiness of french fries and the crunchiness of zucchini, making this summer vegetable a hit in all houses!

What You'll Need

  • 1/2 cup fine, dry breadcrumbs (prepared)
  • 1/2 cup grated Parmesan cheese
  • 3 zucchini
  • 1 large egg, lightly beaten
  • Vegetable oil
  • 1/2 teaspoon salt

What to Do

  1. Combine breadcrumbs and cheese. Cut zucchini in half crosswise; cut each half into 8 sticks. Dip zucchini sticks in egg; dredge in breadcrumb mixture.
     
  2. Pour oil into a Dutch oven or large heavy saucepan to a depth of 2 inches; heat to 375 degrees F. Fry zucchini sticks in hot oil just until coating is golden. Drain on paper towels. Sprinkle with salt, and serve immediately.
