Spinach Souffle

There's something elegant about souffle. And there's something great about this one: It's easy!

What You'll Need

  • 1/2 cup mayonnaise
  • 1/4 cup all-purpose flour
  • 2 tablespoon grated onion
  • 1/4 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ground nutmeg
  • 1 cup milk
  • 1 package (10 ounces) frozen chopped spinach, thawed and drained well
  • 4 eggs, separated
  • 1/4 teaspoon cream of tartar

What to Do

  1. Preheat the oven to 400 degrees F. In a medium-sized saucepan, stir together the mayonnaise, flour, onion, garlic powder, salt, pepper, and nutmeg. Cook over medium heat for 1 minute, stirring constantly; gradually add the milk, stirring until smooth; continue cooking until thick, 3 to 4 minutes, stirring constantly. Do not boil.
     
  2. Remove from heat, beat in the spinach, then the egg yolks; set aside.
     
  3. In a small bowl, beat the egg whites and cream of tartar with an electric mixer on high speed until stiff peaks form; fold into the spinach mixture (do not overmix).
     
  4. Spoon the mixture into a greased 2-quart souffle or casserole dish; place on the lowest rack of the oven and immediately reduce the temperature to 375 degrees F.
     
  5. Bake for at least 40 minutes, or until the top is puffed and has a golden-brown crust. Serve immediately.
