Summer Grilled Zucchini

In the summer our local farmers sure do produce lots of zucchini, which means it's a great buy. Let's cook up some of that value right on our grills!

What You'll Need

  • 1/4 cup white vinegar
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried tarragon
  • 1/2 cup mayonnaise
  • 3 medium-sized zucchini, cut in half lengthwise
  • 1 slice Swiss, Muenster, or mozzarella cheese (optional)

What to Do

  1. In a small saucepan, combine white vinegar, salt, pepper, and tarragon, and bring to a boil. Remove mixture from heat and let cool.
     
  2. Preheat grill to medium-high heat.
     
  3. Add mayonnaise to cooled mixture and blend well, until smooth. Brush mixture on both sides of zucchini slices. Grill slices 5 minutes on each side, with grill cover closed.
     
  4. If adding cheese, top zucchini with cheese 1 to 2 minutes before cooking is completed. Cook until cheese is melted.
     

Notes

If you have some really large zucchini, we recommend using 2 and cutting them lengthwise in thirds.
