What You'll Need

  • 1 1/2 cup all-purpose flour
  • 1/4 cup sugar blend
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 4 tablespoon (1/4 cup) light trans-fat-free margarine, melted
  • 2 eggs
  • 3 tablespoon fat-free milk
  • 2 tart apples, peeled, cored, and chopped (about 2-1/2 cups)
  • CINNAMON PECAN TOPPING
  • __BLANK__
  • 1 tablespoon brown sugar blend
  • 1/4 cup chopped pecans
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoon light trans-fat-free margarine, melted

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9-inch round cake pan with cooking spray.
  2. In a large bowl, beat flour, sugar blend, baking powder, 1/2 teaspoon cinnamon, the salt, 4 tablespoons margarine, and the eggs until thoroughly combined. Stir in milk and apples, then spread batter in cake pan.
  3. To make Cinnamon Pecan Topping, in a small bowl, combine topping ingredients; mix well and sprinkle over batter.
  4. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Serve warm or allow to cool, then cover until ready to serve.
