Apple Cider Cupcakes

Okay, so when you think of an apple cider recipe, cupcakes probably aren't the first thing that come to mind. But, after one bite of these decadent and moist Apple Cider Cupcakes, they'll move right to the top of your list! It's the perfect holiday dessert, but they'll also be perfect to impress the guests all year round! 

What You'll Need

  • 1 (15.25-ounce) package yellow cake mix
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 cup apple cider
  • 1/2 cup vegetable oil
  • 3 eggs
  • __BLANK__
  • Frosting
  • 2 stick butter, softened
  • 1/2 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 3 cup confectioners’ sugar
  • 2 tablespoon apple cider

What to Do

  1. Preheat oven to 350 degrees F. Line 20 muffin cups with paper baking liners.
  2. In a large bowl, with an electric mixer, beat cake mix, 1 teaspoon cinnamon, cloves, 1 cup apple cider, oil, and eggs until thoroughly combined. Spoon batter into liners, filling each about 3/4 full.
  3. Bake 17 to 20 minutes or until toothpick inserted in center comes out clean. Remove to a wire rack to cool completely.
  4. To make the frosting, in a large bowl, with an electric mixer, beat butter, brown sugar, and 1 teaspoon cinnamon until fluffy. Gradually add confectioners’ sugar and 2 tablespoons apple cider, and beat until smooth. Frost cupcakes and serve.
