Hominy Sausage Casserole

If you're bringing the potluck main dish, then we've got the perfect recipe for you to whip up! Made with hominy, sausage, and ooey gooey cheese, our Hominy Sausage Casserole is a great dish when family is gathering around the dinner table, but especially when you want to be the shining star of the potluck! 

What You'll Need

  • 1 (16-ounce) package hot pork sausage
  • 1 (15.5-ounce) can white hominy, drained
  • 1 (15.5-ounce) can yellow hominy, drained
  • 1 1/2 cup shredded sharp cheddar cheese, divided
  • 1 (2-ounce) jar chopped pimiento, drained
  • 1 small onion, finely chopped
  • 4 eggs
  • 1 tablespoon chopped fresh parsley

What to Do

  1. Preheat oven to 350 degrees F. Coat a 7- x 11-inch baking dish with cooking spray.
  2. In a large bowl, combine sausage, white and yellow hominy, 1 cup cheese, pimiento, onion, eggs, and parsley; mix well. Spoon into baking dish. 
  3. Bake 45 minutes, sprinkle with remaining 1/2 cup cheese and bake for 5 to 10 more minutes or until cheese is melted and center is set. Cut and serve.

    • It's a good question! Well, the simple answer is, hominy is simply dried corn that goes through a process which loosens the hulls from the kernels and causes it to double in size. It's been around for a long time and can be found in common food items like tortillas and even grits!
