Mean 'n' Lean Beef Stew

You can still enjoy the great flavor of your old favorite beef stew, but now, by reducing the amount of beef and using even more vegetables, what you get to cut down on is fat and calories.

What You'll Need

  • 1 pound beef flank steak, well trimmed and cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, cut into 8 wedges
  • 4 carrots, cut into 1-inch slices
  • 2 large celery stalks, cut into ½ -inch slices
  • 1 3/4 cups ready-to-use beef broth
  • 5 potatoes, cut into 1-inch chunks

What to Do

  1. In a medium-sized bowl, combine steak and flour; toss to coat well.
     
  2. Coat a nonstick soup pot with cooking spray and heat over medium-high heat. Add coated beef, then sprinkle with garlic powder, onion powder, salt, and pepper.
     
  3. Sauté 3 to 5 minutes, or until steak is browned. Add remaining ingredients except potatoes; cover and reduce heat to low. Simmer 40 to 45 minutes, then add potatoes; cover and simmer 20 to 25 minutes, or until potatoes are fork-tender.
