Bourbon Chicken

We're saluting Chinese New Year with our Test Kitchen's version of a Chinese restaurant take-out favorite, these scrumptious Bourbon Chicken Bites. Of course, don't wait for a holiday to enjoy this easy chicken recipe that suits anytime at all!

What You'll Need:
  • 2 pounds boneless, skinless chicken breasts, cut into 2-inch chunks
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1/4 teaspoon ground red pepper
  • 1/2 teaspoon salt
  • 1/4 cup canola oil
  • 1 cup jalapeno pepper jelly
  • 1 tablespoon light soy sauce
  • 2 tablespoons bourbon
What To Do:
  1. In a medium bowl, combine chicken, cornstarch, garlic powder, ground red pepper, and salt; toss to coat well.
     
  2. In a large skillet, heat oil over high heat. Add coated chicken in batches and cook 6 to 8 minutes, or until golden and no pink remains, stirring frequently.
     
  3. In a large saucepan over medium heat, bring jelly, soy sauce, and bourbon to a boil. Cook 2 to 3 minutes, or until jelly has melted, stirring constantly. Add chicken and toss to coat. Serve hot.

I made this last night and it was REALLY good! I just jalapeno pepper jello (which was green) but once it was put over the chicken pieces you couldn't even tell what color it was! I used brown rice, with scabbled egg and peas as a base for the chicken. A keeper recipe!

it sucked !!!! i followed the recipe every step and it didnt taste like bourban chicken at all.....all i tasted was that nasty jelly...it was pink color instead of bourban chicken brown color.....i just looked other recipe's up for bourbon chicken and none of them called for pepper jelly...would not recommend

Don't know what you did wrong but this recipe came out just fine. The recipe calls for jalapeno pepper jelly not just pepper jelly. I have substituted apricot preserves and made a few seasoning adjustments and it came out very well. Using a full flavor bourbon helps also. I used Wild Turkey 101.

Just 1/4 cup jello and 3/4 cup Wild Turkey 101. Or What ever you like to drink.

This looks so good. I am going to try this very soon using my home made Jalapeno jelly.

We live in a small town and could not find jalapeno jelly but our store had red pepper jelly it came out very good and we will make it again, quick and easy to make with lots of flavor.

You can get a recipe for pepper jelly on line. Just enter it and you will find several.

havn't tried it but will, looks and sounds really good.

I too would like to know if you can use anything other than the jalapeno jelly, so it's not too spicy. Any suggestions?

You can use apple jelly.. no spices....

If you can't find the jam, try mincing a small Jalepino peper, the wrapping it in cheese cloth and boil it in a smaall amount of water in a little sauce pan, Once the peppers have softened, stir them into a jar of apple jam, and add a bit of the flavored water. Should taste about the same.

can you use raspberry jam instead of Jalepino Pepper jam?

Jalapeno pepper jelly is not in my area either! Is there something that would make a good substitute. (I already saw your comment, sherwest4--sorry, I don't order anything off the internet)

Hi bnrudy, I don't see why you can't bake these nuggets on a cooling rack on a cookie sheet. When I make these and I will make these, that is how I will do them. I probably will spray the cooling rack lightly with spray cooking oil to prevent the nuggets from sticking.

Where does one get jalapeo pepper jelly? Not on my supermarket shelves.
