One-pot meals are simple and hands-off... just the way we like 'em! This Chow Mein Chicken Casserole is no exception and we know you'll love it as much as we do!

What You'll Need

  • 1 tablespoon butter
  • 1 small red bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 (8-ounce) packages sliced fresh mushrooms
  • 3 green onions, chopped
  • 1 (10-3/4-ounce) can cream of mushroom soup, undiluted
  • 3/4 cup mayonnaise
  • 1 tablespoon soy sauce
  • 3 cups chopped cooked chicken
  • 1/4 teaspoon black pepper
  • 1/2 (5-ounce) can chow mein noodles (2 cups)

What to Do

  1. Preheat oven to 350 degrees F. Melt butter in a large skillet. Add red bell pepper, garlic, and mushrooms; saute until tender.
     
  2. Stir in chopped green onions and next 5 ingredients.
     
  3. Pour into a lightly greased 7- x 11-inch baking dish. Sprinkle with chow mein noodles. Bake, uncovered, 30 minutes or until bubbly.
     

Notes

Don't worry if you don't have the exact ingredients on hand. You can substitute green bell pepper for the red, cream of chicken soup for mushroom soup, and chopped cooked pork for the chicken. And if you have canned mushrooms in your pantry, 2 (4.5-ounce) cans substitute nicely for the fresh. Just drain 'em-there's no need to saute!

What a fun twist on take-out night!

This is a very very good dish. I served it on top of Mr. Food's "Easy Fried Rice" recipe and it was delightful. I too added water chestnuts for texture.

I copy and paste recipes I find online into an email to myself. I then move the email into recipe folders I have set up on my email. I have folders in food categories like main dishes, sides, desserts, cookies, soups, breads etc. Then, when I'm looking for a main dish meal, I'll go through my folder of main dishes right off my email. Super quick and easy :)

Do you use Google Chrome as your search engine if you do on the top corner next to the star there is three lines if you click on that and come down to print it should work as that is what I did.

I will try this one, I love receipes like this, i think you can add extra items, like your chowmein veggies, I also think bean sprouts, n small corns would do nicely, will try this soon.

Think of those Chinese, Japanese, or other oriental dishes you have eaten out. There are endless possibilities: snow peas, broccoli or broccoli rabb, bean sprouts, baby bok choy, water chestnuts, celery, spinach, baby corn, ........ Check out the contents of a can of Chop Suey vegetables at your grocery store, and just pick up the fresh veggies and use .... I would not recommend using the canned veggies, because they will be too soft for the casserole.

Tinysnickers --- Chow mein uses the crispy noodles ... Chop Suey is the same as chow mein, only it is served over rice rather than crispy noodles. You pick ... you can probably serve it both ways.

I DONT CARE FOR MAYONNAISE BUT IT SURE WAS GOOD IF MY HUSBAND HAS SECONDS I THEN KNOW ITS GOOD;)
