Roasted Onion Salad

When onions are cooked long enough to brown, they caramelize as a result of the natural sugar that's in 'em. It's a magical process that adds rich flavor to this salad.

Serves: 8

Cooking Time: 15 min

What You'll Need:
  • 5 medium onions, peeled and cut into 1/2-inch think slices
  • 1/4 cup olive oil
  • 8 cups gourmet mixed salad greens
  • 1/2 cup chopped walnuts, toasted
  • 1 (4-ounce) package crumbled blue cheese
  • prepared garlic vinaigrette
What To Do:
  1. Preheat the oven to 450 degrees. Arrange onion slices in a lightly greased roasting pan. Drizzle evenly with olive oil.

  2. Bake at 450 degrees for 12 to 15 minutes or until onion slices are lightly roasted. Cool 5 minutes.

  3. Combine salad greens, walnuts, and blue cheese; toss gently. Top with onions, and drizzle with garlic vinaigrette.
