These Hummingbird Muffins are a modern day version of the 1950's-style Hummingbird Cake that we all love. They start out with a cake-mix (making them super easy!) and are filled with delicious nuts, cinnamon, and fruit. 

What You'll Need

  • 1 (18.25-ounce) package yellow cake mix
  • 1/3 cup vegetable oil
  • 1 (8-ounce) can crushed pineapple, well drained with juice reserved
  • 3 eggs
  • 1 teaspoon ground cinnamon
  • 1 ripe banana, cut up
  • 3/4 cup chopped walnuts, divided
  • 1/2 cup chopped maraschino cherries, well drained, divided

What to Do

  1. Preheat oven to 350 degrees F. Coat 18 muffin cups with cooking spray.
     
  2. In a large bowl, combine cake mix, oil, pineapple, eggs, and cinnamon. Add enough water to reserved pineapple juice to make 1/2 cup; add it to bowl then beat with an electric mixer until mixture is thoroughly combined.
     
  3. Stir in banana, 1/2 cup walnuts, and 1/4 cup cherries; mix well then pour into prepared muffin cups. Sprinkle with remaining nuts and cherries.
     
  4. Bake 22 to 25 minutes, or until a toothpick inserted in center comes out clean. Let cool 10 to 15 minutes, then remove from muffin cups. Let cool completely.

how much batter do you put in tins?

Where can I buy 18.25 oz cake mix? I only see 15.25 oz in my supermarkets. Can I use the smaller box?

Hi there! This recipe can be made with either size of cake mix without any modifications, as some cake mix brands' product sizes vary. Enjoy!

Can this recipe be made into a bread recipe instead of cupcakes?

Hi there! While the Mr. Food Test Kitchen has not tried making this recipe in a bread form, it does believe that it is possible. Bake in a 9 x 5 baking pan at 350 degrees F oven for 50 to 60 minutes or until toothpick inserted in center comes out clean. Enjoy!

These were o.k. The top gets a little too moist

Hello Anne! Aside from cooking time, there should be no modifications to make if you're making these Hummingbird Muffins mini-sized. Unfortunately, we have not tested them as mini muffins, so we're not sure how much time it would take to cook these. If you give these a try, we'd love it if you would share how they turned out! :)

They were very easy to make and a big hit with several of my friends. I am sharing the recipe.

Had to leave out nuts d/t allergy but my son and young grandson loved these muffins.

Made these because of the name used lpaper liners I was a bit worried as after mixing everything I realised that the cake mix was 16oz and not what recipe called for but all turned out well

Made these. Delicious. Pineapple had just the right hint of tart sweetness. Told my niece they were hummingbird cupcakes. Her son wanted to know how many hummingbirds and how did I catch them (he's 5), right about then his Mother yelled, OMG, I think I just ate a bone!! Couldn't stop laughing. He ate them up, not at all worried about the "poor hummingbirds" and thought the cherries were blood. A definite keeper.

These are good. I couldn't taste much pineapple. Maybe pineapple tidbits would help with that instead of crushed. The banana came thru and next time I'll use pecans instead of walnuts. I also had to bake them about 10 extra minutes.

I used a 20 oz. can of the crushed pineapple, that way you don't have to dilute the juice with water, & I used all the pineapple, which is just about a cup, once it's well drained. I also added about 1/3 cup raisins, sticking with the tropical feel. Turned out great & tasted that way also.

Would I be able to bake this as a sheet cake???

Yes you can bake this as a sheet cake. As a muffin you have portion control since kids tend to go wild with it.

I would love to make this... BUT I'll have to find a yellow cake mix scratch recipe... TOO many preservatives in a cake MIX!!!

You should be able to find a scratch yellow cake mix. Google.

I've made these and they are delicious. I don't like maraschino cherries, so I added sweetened cranberries and it was great.

This is very moist and tasty. This was easy to make and the only change I made was a creme cheese Iceing

Could these be made as mini-muffins? At what oven temp and for how long? They sound like a treat people would pick up as part of a picnic or cookie type day, but full sized ones would be too big. If anyone has experience with baking mini-muffins, or tries these as mini-muffins, please let me know. Thanks!

There should be no problem making them as mini muffins. Use the same temp and check after 15 minutes with a toothpick.

Not a fan of maraschino cherries, I would think that you could sub with other type of chopped berries, cherries or dry fruit =..=

These are WONDERFUL. I was dying to try the recipe and made them for my husband to take to work. I usually don't sample, but these came out so beautiful I just could not resist. I was so excited when the first batch came out of the oven because they were just gorgeous just like the picture.
