Ready to try a salad that reaches a whole new level of deliciousness? Well, we've got the salad for you, right here, with this Greek Potato Salad. Fresh, easy, and a knock-out... you can't miss with a salad like this!

Makes: 5 cups

Preparation Time: 3 min

Cooking Time: 30 min

What You'll Need:
  • 2 pounds new potatoes
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 3 tablespoons mayonnaise
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 cup pitted kalamata olives
  • 1 (4-ounce) package crumbled feta cheese
  • 3 green bell pepper slices
What To Do:
  1. Place potatoes in a Dutch oven; add salted water to cover, and boil 30 minutes. Cool slightly. Cut into 1-inch pieces.
     
  2. Whisk together oil and next 5 ingredients; toss with potatoes.
     
  3. Sprinkle with olives and feta cheese. Top with bell pepper slices for garnish.
Notes
