Noodle Kugel (Pudding)

This one will have you daydreaming about the good old days. You'll find yourself going back for seconds (and maybe even thirds!). This pudding was a standard in the old neighborhood, and everybody had their little secret touch with it. So, use yours, too. It all works!

Serves: 15

What You'll Need:
  • 1 pound egg noodles
  • 2 tablespoons vegetable, oil, divided
  • 8 eggs, slightly beaten
  • 1 (16-ounce) container cottage cheese
  • 1 (16-ounce) container sour cream
  • 1 (20-ounce) can crushed pineapple
  • 1 1/2 cups sugar
  • Pinch of salt
  • 2 teaspoons vanilla extract
What To Do:
  1. Preheat over to 350 degrees F.
     
  2. To a large pot of boiling water, add 1 tablespoon oil and cook noodles until just tender, 5 to 7 minutes (do not overcook); drain and place in a large bowl. Add remaining oil to noodles, then add remaining ingredients and mix.
     
  3. Place noodle mixture in a 9- x 13-inch glass baking dish that has been coated with cooking spray. 
     
  4. Bake uncovered  1-3/4 to 2 hours, or until set and lightly browned and crisp.
     
Notes

Vary the amounts of sugar, salt, and vanilla extract according to your own personal taste.
