Mediterranean Potatoes

Lots of seasoning, lots of OOH IT'S SO GOOD!!

Cooking Time: 40 min

What You'll Need:
  • 1 tablespoon olive oil
  • 1 medium-sized onion, chopped (about 1 cup)
  • 1 tablespoon chopped garlic
  • 1 teaspoon salt
  • 1 can (28 ounces) chunked tomatoes, drained
  • 1/2 cup dry white wine
  • 2 teaspoons sugar
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon hot pepper sauce
  • 1/4 teaspoon pepper
  • 5 medium-sized potatoes (2 pounds), peeled and quartered
What To Do:
  1. In a large skillet, heat the oil over medium heat; sauté the onion and garlic just until the onion is soft. Add the remaining ingredients except the potatoes and cook for 15 minutes.

  2. Meanwhile, in a large saucepan, cook the potatoes in boiling salted water until tender; drain.

  3. Place the potatoes in an 8-inch square baking dish. Spoon the sauce over the cooked potatoes. Serve immediately or keep warm in a 250 degree F. oven until ready to use.

  4. Makes 3 cups of sauce.

Notes

You can also serve this sauce over mashed or baked potatoes.
