Personal Chef and cooking instructor, Chef Danielle stopped by the Test Kitchen to share her hearty and flavorful recipe for Sweet Potato Black Bean Chili. And man, is it good!

What You'll Need

  • 3 sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 (14-1/2-ounce) cans diced tomatoes, undrained
  • 2 (15-1/4-ounce) cans black beans, undrained
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

What to Do

  1. In a large slow cooker, combine all ingredients; mix well.
  2. Cover and cook on high 4 hours, or until potatoes are fork-tender.

Notes

Some crockpots generate more heat than others, I have an old Rival and I can roast a whole 5lbs chicken in around 4 hours. When I make my 3 bean ground turkey chili it is close to an inch of the top and it still boils like crazy and it's a 5 qt capacity. A tip when crockpotting, put a doubled towel over the lid to hold heat in for faster cooking. Bon Appetite! L.D.

I made this with unsalted canned tomatoes and unsalted canned black beans and omitted the salt in the recipe (there is some salt in the chili powder). It was delicious and we didn't miss the salt. My husband is on a low sodium diet but I'm not sure what the sodium content is with the above substitutions. Also we topped it with crushed, unsalted tortilla chips. jas

I made this today. It did take longer than four hours to cook, more like five. The potatoes took forever to cook and the onions did not get all the way done. I would suggest you saute your onions and sweet potatoes before adding to the crock. Over all the taste was good for a vegetarian chili. I would make again.

I so want to make this recipe, but I need to know the nutritional values first. My husband has several health-related issues and sodium, fat and sugar contents are important. How do I find out what these levels are for this recipe?

This recipe is cooking in my slow cooker right now, but I was wondering, having only used a small round slow cooker way back when, I know have a Ninja ( large oval ) is there any difference in cooking time between the round and oval? Can't wait to try this chili tonight

sweet potatoes come in MANY SIZES..approx how many cups? haven't tried yet but know it will be delish & SO GOOD

I don't have a slow cooker, can I still make this recipe? I have made black beans and sweet potato burritos, so I know this will taste absolutely delicious.

I dont see why you cant use a stock pot and cook on a low heat, while stirring it every so often. I cant wait to try this myself.

I roasted the sweet potatoes first when I prepared over the stove

You can cook this in a soup pot. We would recommend adding 2 cups or either chicken or vegetable broth and cook it covered for about 50 to 60 minutes or until the potatoes are tender. However, please be aware that we did not test the recipe using this method, so we can not guarantee the results. Good luck and enjoy!
