We top our fresh apple and spice-baked Fresh Apple Cinnamon Muffins with a nutty, brown sugar blend, that's really incredible! It's all the flavors you love, mixed into one really conveniently-sized treat. We think you might need to make a couple of batches!

What You'll Need:
  • 1 1/2 cups all-purpose flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon, divided
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1 apple, peeled, cored, and finely chopped
  • 4 tablespoons (1/4 cup) butter, melted
  • 1/3 cup chopped nuts (walnuts or pecans)
  • 1/4 cup packed brown sugar
What To Do:
  1. Preheat oven to 375 degrees F. Coat a 12-cup muffin tin with cooking spray.

  2. In a large bowl, combine flour, sugar, baking powder, 1/2 teaspoon cinnamon, and the salt.

  3. In a medium bowl, beat together the egg and milk. Stir in chopped apple and melted butter. Add all at once to flour mixture; stir just until mixed (batter will be very stiff).

  4. Spoon into prepared muffin tin, filling each cup about two-thirds full. Mix chopped nuts, brown sugar, and remaining cinnamon to make topping; sprinkle evenly over muffins.

  5. Bake 15 to 20 minutes. Remove from pan immediately and serve warm.

I used 1/4 cup sugar and 1/4 cup splenda added 2 Tablespoons oil and an extra chopped apple pretty good!

Dear Test Kitchen Team, I am a lacto vegetarian. I love cakes but cannot find any cake recipe without eggs. Could you please make cakes without eggs?

Hi there Giggy! While we don't have any cakes without eggs at this time, we may start working on some specialty recipes in the future. Have you searched the internet for ideas on how to replace the eggs in cakes? One suggestion we found is to use an egg replacer; an egg-free substitute that can be used for baking.

Google search Divvies Chocolate Cupcakes (marthastewart.com). I have made that recipe hundreds of times for my five kids school snacks without the frosting. We call them chocolate muffins. My kids love them.

Giggy. Hi I am Marcia Poli. I have a chocolate cake recipe with no salt or eggs in it. Email me at polisteve@ymail.com. I will get you that recipe. Ok. Marcia Poli.

I've made these a few times and my family enjoys them.

I MADE THESE MUFFINS TWICE NOW AND THEY DID NOT RISE UP LIKE MUFFINS SHOULD. I FOLLOWED THE RECIPE AS IT IS WRITTEN BUT EVEN THE SECOND TIME THEY WERE SMALL AND TASTED OKAY BUT THEY LOKED NOTHING LIKE THE PICTURE. I HAD ALL FRESH INGREDIENTS. THE BATTER WAS DRY AND A LITTLE HARD TO STIR. COULD BE THAT MY MUFFIN PAN IS SMALLER THAN THE ONE USED IN THE PICTURE? PLEASE ANY ADVICE. THE ONLY THING I DID WAS USE DRY MILK AND SPLENDA.

Came out a bit dry and heavy.

We really love these muffins. Have made them three times now. Only change I made was to add about 1 tsp. of vanilla to the batter. Will be a regular serve at our house.

This is a good recipe for apple muffins but I did not like the crusty top of brown sugar. I think next time I will make a confectioner's sugar topping to put on after it comes out of the oven. The muffin without the crusty topping is good!

yes, if it would print

I would try and copy it to a Word document and then try and printed. This has worked for me. Good luck!

Muffin is kind of blah, but topping is excellent. Maybe double the topping to make it better??

Made em. Loved em. Will be a regular in this house. http://www.caramelandcocoa.com/2013/08/fresh-apple-cinnamon-muffins.html http://www.caramelandcocoa.com/

this sounds great! I would like to make this into a loaf. can I & how long would I bake it? And, is one apple enough? i'm giving it five stars just cuz it sounds 'ooh so good'!

What kind of apples do you use? There are soooo many to choose from.

We found that any apple will work for these muffins. However, we recommend Granny Smith, Gala, or Fuji because they are crisp and tart and hold up well when baked. Enjoy!

Very very yummy! I grated the apple though instead of chopping and I used two of them. I love love love this recipe!!

I would really like too make these but I have too watch my carbs. Would u be able to tell how many carbs would be in one muffin?

Only one apple for 12 cupcakes?

terrific!!!! just like this web site

look delish and simple enough to make, however I will have to grind the nuts up as my family won't eat anything if they can see nuts.....how little they know!!!!

Just made these simple muffins. Accidentally mixed the brown sugar in with the egg and milk with the chopped apple and melted butter and left out the remaining 1/2 teaspoon of cinnamon and nuts. I didn't sprinkle anything on top; just popped them in the oven. They were really yummy straight from the oven. I will make them this way from now on...

These were REALLY good! However you do not need as much of the brown sugar topping as this recipe states, it would be too much as these muffins are just sweet enough.

these sound so good
