What You'll Need

  • 1 2/3 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 2 teaspoons poppy seeds
  • 1 large egg, lightly beaten
  • 3/4 cup milk
  • 1 teaspoon grated lemon rind
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons butter, melted
  • 1/3 cup frozen lemonade concentrate, thawed and undiluted
  • 1 tablespoon powdered sugar

What to Do

  1. Preheat the oven to 375 degrees. Combine first 5 ingredients in a large bowl; make a well in center of mixture.

  2. Combine egg and next 4 ingredients; add to dry ingredients, stirring just until moistened. Spoon batter into 3 (3-1/2-inch by 6-inch) disposable loafpans coated with nonstick cooking spray.

  3. Bake 20 to 22 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pans on a wire rack 5 minutes.

  4. Combine lemonade concentrate and powdered sugar. Spoon over warm cake.

    Makes 3 loaves.
