Silky Smooth Pepper Chops

We call these Silky-smooth 'cause the sauce is so creamy and delicious - a perfect match for pork chops.

Serves: 4

Cooking Time: 25 min

What You'll Need:
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 4 pork rib chops (1 to 2 pounds total), about 1 inch thick
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 2 teaspoons black pepper
What To Do:
  1. In a large skillet, heat oil over medium heat and saute garlic 1 to 2 minutes or until golden. Add pork chops and cook 10 to 12 minutes, turning once. Remove chops from skillet and drain excess liquid from skillet.
     
  2. Reduce heat to low and add remaining ingredients to skillet; mix well. Heat mixture 2 to 3 minutes until heated through.
     
  3. Return chops to skillet and coat with sauce.
     
  4. Continue cooking an additional 6 to 8 minutes, or until done to medium or to desired doneness beyond that.
     
Notes

For a fuller black pepper flavor, use fresh-cracked black peppercorns. Simply grind the pepper in a pepper mill or, if you don't have one, place 2 teaspoons whole peppercorns in a plastic storage bag. Seal the bag and use a mallet or rolling pin to crack the peppercorns on a durable surface.
