Popcorn Dressing

When I was experimenting with this recipe, I searched for the type of ingredients the Pilgrims would have used at their first Thanksgiving and discovered that the Native Americans introduced popcorn to the Pilgrims way back then. It hit me that I should try it in here and, what do you know, now we've got a tasty, authentic-flavored popcorn dressing!

Serves: 6

Preparation Time: 7 min

Cooking Time: 40 min

What You'll Need:
  • 6 cups crumbled cornbread or corn muffins (see Note)
  • 3 cups popped popcorn
  • 1 medium onion, finely chopped
  • 1 3/4 cups chicken broth
  • 1/2 cup (1 stick) butter, melted
  • 2 eggs
  • 1 1/2 teaspoons dried rubbed sage
What To Do:
  1. Preheat the oven to 375 degrees. Coat an 8-inch square baking dish with cooking spray.

  2. In a large bowl, combine all the ingredients; mix well. Spoon into the baking dish.

  3. Bake for 40 to 45 minutes, or until the center is set.

Notes

Ready-made cornbread or muffins can be found in the bakery section of your supermarket, or you can start from scratch and use your favorite cornbread recipe.
