There's no reason to buy ready-made for the biggest holidays of the season, when a homestyle go-along like our tasty country Corn Casserole is so easy to make. This hearty veggie bake fits Thanksgiving and Christmas perfectly, and takes almost no time thanks to a few shortcuts from the freezer asile!

What You'll Need

  • 1 (12-ounce) package frozen corn kernels, thawed
  • 2 eggs, beaten
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter, melted
  • 1/4 cup coarsely broken butter crackers

What to Do

  1. Preheat oven to 350 degrees F. In a large bowl, combine corn, eggs, milk, flour, vanilla, sugar, salt, and pepper. Pour into a 1-1/2-quart ungreased casserole dish.
     
  2. Combine butter and cracker crumbs and sprinkle evenly over top of the casserole.
     
  3. Bake for 45 to 50 minutes, until set.

Notes

  • We used Ritz® crackers to make this corn casserole, but any butter-type crackers or saltine crackers will work.

Can this be made ahead of time?

Yes, this can be made ahead of time! Just cook it 5 mins less than the recommended time and reheat day off, in the oven on low heat, or in the microwave. :)

This is the perfect church lady recipe. I made this and the only thing I did different was add butter. For every tablespoon of butter I added, I decreased the same amount in milk. It was absolutely a hit at the last church pot luck. This is also known as a very southern recipe. You know, we make casseroles out of anything!

Can't wait to try this! It looks so good in the Temptations casserole dish pictured!

How does this thicken if you have no flour or cornbread mix in it. Please let me know as I'm thinking of making this for about 40 People

The egg and milk mixture will set up like an egg custard to give it body. Just adjust your values for a larger dish, or, make several smaller ones to spread around the group

I made this for Christmas dinner. It was very good. I actually have used a recipe in the past that I like better but this one was easier and quicker. Also, easier to re-heat. I'll use this one again. I wondered why there wasn't any butter in the main ingredients. I think the next time I'll add some.

I made this for thanksgiving and it was a hit, maybe next time ill try adding cheese as someone else did. There seems to be a few good variations so this is a keeper. Thanks

This is very similar to my recipe, only I add parmesan to the buttered cracker crumbs.

It says mix first 7 ingredients together, next step combine butter and cracker crumbs and sprinkle over the top. Very clear if you can count. This sounds like a quick substitute for my usual scalloped corn where I make my cream style corn first from scratch with fresh corn.

Another variation that we've made in the family for years is... 1 can reg corn, 1 can creamed corn and 1 sleeve Ritz crackers (broken up, not crushed) mixed in a 2 qt casserole. Beat 2 eggs with 1/2 cup milk, 1/4 teaspoon pepper and 2 teaspoons sugar. Pour over corn/cracker mixture. Dot with 2 tablespoons butter and bake for 40 to 45 minutes.

If you have an Aldi's near you try their snack crackers. After one box I would never go back to Ritz and they are half the price also. Look like Ritz but oh so much more tasty.

Yes, the melted butter and cracker crumbs are mixed together and then sprinkled over the casserole before baking.

Sounds delicious, ,but do you put the cracker crumb on top on in with the other ingredients?

The instructions say to mix everything together. They don't mention sprinkling any crumbs on top of anything.

half the milk, 1/4 cup sugar, no vanilla, 1 half cup flour and a can of cream corn ! It's the best !!!

Your casserole sounds more like corn candy with all that sugar and flour If not using fresh ...a can of drained whole kernel corn and a can of cream corn works well if you like vanilla you can add it seems to add a nice touch without being too sweet the one teasppon of sugar adds just enough sweetness

could 1/2cup shredded sharp cheddar be added for last 10minutes

Made this last night, but put 1/2 cup milk instead. Also put crumbs & butter within other ingredients. This was perfect. Easy. Will be nice for gatherings.
