Weekday Stuffed Peppers

If you like eating light during the week, then our recipe for Weekday Stuffed Peppers is perfect. Each pepper is packed with ground beef, rice, and lots of spice. We like to serve them with a spinach salad for an easy weekday lunch or weeknight dinner.

What You'll Need

  • 1 (29 ounce) can tomato sauce
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound ground beef
  • 1 cup instant rice
  • 1 small onion, chopped
  • 6 large green bell peppers, washed, tops removed, and seeded

What to Do

  1. In a 6-quart soup pot, combine tomato sauce, water, garlic powder, salt, and black pepper; mix well. Reserve 1 cup of mixture and set aside in a large bowl.
     
  2. Add ground beef, rice, and onion to large bowl; mix well.
     
  3. Stuff each bell pepper with equal amounts of mixture and place in soup pot. Spoon sauce from pot over peppers. Cover and cook 55 to 60 minutes over low heat, or until no pink remains in meat and rice is tender. Spoon sauce over peppers and serve.

I am so excited to try this recipe! I have several pepper plants that will give me peppers than I know what to do with. I have never seen a stovetop stuffed pepper recipe. I use a slow cooker recipe to make stuffed peppers, and I know some people use their ovens to make stuffed peppers.
