Enjoy the taste of everybody's favorite caramel apples in this no-fuss form that's a cupcake on a stick. With Caramel Apple Cupcakes there's less mess but still lots of fun!

What You'll Need

  • 1 (18-1/4-ounce) package spice cake mix
  • 1 cup chopped Granny Smith apple (about 1 large)
  • 35 caramels, unwrapped
  • 1/4 cup evaporated milk
  • 1/2 cup chopped peanuts
  • 24 wooden craft sticks

What to Do

  1. Preheat oven to 350 degrees F. Line muffin tins with paper baking cups.
     
  2. Prepare cake mix according to package directions; stir in apple. Spoon batter into muffin cups, filling two-thirds full.
     
  3. Bake 20 minutes, or until a toothpick inserted in center comes out clean; remove to a wire rack to cool.
     
  4. In a medium saucepan over low heat, combine caramels and evaporated milk. Stir 4 minutes, or until smooth.
     
  5. Spoon caramel mixture over cupcakes; immediately sprinkle with peanuts, pressing in slightly. Insert a wooden stick into center of each cupcake. Store covered in an airtight container.

Try making a pound cake type cupcake 1 Duncan Hines cake mix 1 package vanilla instant pudding 4 eggs 1/2 cup oil and a very scant 1 cup of water sometimes I use 3/4 cup water this will produce a texture with much more body and a delicious cup cake

Am I doing something wrong? When my kids pick-up the cupcakes by the stick the cupcake breaks apart and falls all over the floor. They taste good, but . . . I know the name is Carmel Apple Cupcakes so that is the reason for the stick but even adults try to pick-up by the stick. Only 3 stars because I think the stick is the problem.

This recipe is still a cupcake recipe, so the stick is more decorative than a tool. Spice cakes and cupcakes are more airy and fall apart more than chocolate cupcakes.

I have not tried the cupcakes yet however they sound wonderfull.

These look like the perfect fall treat! They'd be great for my niece's birthday coming up.

I agree! But the big kids, too! I would like to make these in a mini cupcake size without the stick for bite sized finger desserts. I imagine the cooking time will be a lot less, so I'll just stand there and watch them cook and not walk away! I could also elevate them and use chopped pecans instead of peanuts, but then it gets pricey for a potluck. Peanuts will do just fine!
