"No-Bake" Baked Potato Salad

No-Bake Baked Potato Salad

This twist on traditional potato salad has all the taste of a loaded baked potato, minus the baking part. Enjoy our No-Bake Baked Potato Salad for a change of pace.

What You'll Need

  • 8 medium potatoes (about 3 pounds), scrubbed and cut into 1-inch chunks
  • 1 tablespoon salt
  • 1 (16-ounce) container sour cream
  • 1/4 cup real bacon bits
  • 4 scallions (green onions), thinly sliced
  • 1/2 teaspoon black pepper

What to Do

  1. Place potatoes in a large pot and add enough water to cover them. Add salt and bring to a boil over high heat.
     
  2. Cook potatoes 10 to 15 minutes, or until fork-tender; drain well and allow to cool slightly.
     
  3. In a large bowl, combine remaining ingredients; mix well. Add potatoes and mix until well combined.
     
  4. Serve warm, or cover and chill until ready to serve.

Am I safe in assuming the peel is left on the potatoes in this salad...it doesn't say otherwise in the description but the picture appears to be without. I was really surprised to see there was no eggs, celery or onion in this recipe, but I'm guessing you're going for a loaded baked potato feel right? The addition of cream cheese sounds delicious cheryldemars5...I'd definitely go warm with this one!

I just made this loaded potato salad and added the cheese too. It was a big hit at the potluck dinner. I've learned to make 2 so we have one when we get home because it's all gone whenever we take it to a potluck.

Where's the bacon?

I make this frequently using fresh chives and grated cheese. It's great hot or cold!!

I made this and added three ounces of softened cream cheese. People couldn't quite tell what the secret ingredient was, but this salad got lots of "Oh, it's sooo good."

This is one good potato salad plus the fact I feel good about eating it as I have to watch my fat content and as best I can tell, with no egg yolks or real sour cream ( I use no sour cream) this will be a staple in my recipe file.

you can use fat free plain greek yogurt instead of sour cream. The taste is the same, without the fat, and provides lots of protein.

This was really good! The only thing I did differently was to add a T. of dry ranch dressing. Hubby loved it!

Easy,quick and tasty recipe for picnics. Use only a teaspoon of salt.

Since you're adding the salt to the water and NOT to the actual potato dish, I think it can handle a tablespoon of salt.

This recipe is GREAT but don't use a Tablespoon of salt. I assume this should have been a teaspoon at the most!!!

The salt goes in the boiling water with the potatoes.

I like simple recipes when in a hurry-this is just such a recipe-thank you!
