Bananas Foster

Imagine yourself in a five-star restaurant, looking over the dessert menu. You're sorely tempted by several of them until one catches your eye: Bananas Foster. There's nothing like finding the recipe for your favorite restaurant dessert to really make your day a little brighter. Whether you plan to serve it up at your next party or you plan to make yourself a special batch, this restaurant dessert is one of the best.

What You'll Need:
  • 1/4 cup butter
  • 1/3 cup packed dark brown sugar
  • 1/2 teaspoon ground cinnamon
  • 4 bananas, quartered
  • 1/3 cup banana liqueur (see note)
  • 1/3 cup dark rum (see note)
  • 1 pint vanilla ice cream
What To Do:
  1. Melt butter in a large skillet over medium-high heat; add brown sugar and next 3 ingredients. Cook, stirring constantly, 2 minutes or until bananas are tender.

  2. Pour rum into a small long-handled saucepan; heat just until warm. Remove from heat. Carefully ignite with a lit match, and pour over bananas in skillet. Baste bananas with sauce until flames die down. Serve immediately over ice cream.

Notes

If you don't have banana liqueur, double the amount of rum. Flambe is a French term that describes the dramatic method of preparing and serving food with flaming alcohol-as in this favorite New Orleans dessert. Never use 150-proof alcohol, though, as it's too volatile and could explode when ignited.
