Don't hurry! In less than an hour you can have this new version of a tuna and cheese casserole ready to receive raves from your guests...and your family, too!

What You'll Need

  • 8 ounces uncooked ziti, penne, or other tubular pasta
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1 (10-3/4-ounce) can cream of mushroom soup
  • 1 (15-ounce) container ricotta cheese
  • 2 (6-ounce) cans solid white tuna, drained and flaked
  • 2 cups (8 ounces) shredded mozzarella cheese, divided

What to Do

  1. Preheat oven to 350 degrees F. Coat a 2-1/2-quart baking dish with cooking spray.
     
  2. In large pot of boiling salted water, cook pasta according to package directions; drain, rinse with cold water, drain again, and set aside in a large bowl.
     
  3. In a medium skillet, melt butter over medium heat and sauté onion and red bell pepper until tender, about 4 minutes. Add to pasta, along with mushroom soup, ricotta, tuna, and 1 cup mozzarella cheese; mix well.
     
  4. Pour mixture into prepared baking dish. Top with remaining mozzarella cheese and bake 30 minutes.

Notes

Why not make this ahead and freeze it? Then all you have to do is thaw, heat, and serve.

My starting to wonder if I'm very old or something because we ate Tuna Casseroles all the time growing up and I still make them today. So easy to throw together and amazing flavor. You just don't use the ones with oil because the flavor is very fishy. Albacore Tuna packed in water is very mild and our favorite for Tuna Casseroles. This is different but I'm willing to try it. But hey just cook some noodles, season with salt and pepper, throw in some butter, heavy cream or milk and some american cheese slices or cheddar cheese to taste. Scoop onto plate and top with Crispy dried onions I think they are n the salad dressing isle. I've made this quick or placed in a dish with more sauce and backed with some cheese and the crispy onions on top and both are wonderful.

OOPS forgot the main ingredient haha TUNA!!! Use one to two cans drained.

I think if the recipe is retitled with something like "Tuna Casserole Ziti" maybe people would be more receptive. It sounds like a great tuna casserole recipe. I love tuna casserole made with macaroni so think this ziti version would be great too.

I agree with tdzm and the boy scout! I've added it to my cookbook and plan to try the twist on my usual tuna casserole next week. But I'm sure others can find lots of baked ziti recipes with ground beef if that's what they prefer.

Would there be a substitute for the Ricotta, other than cottage cheese, that could be used in this recipe?

Sour cream perhaps?

I guess you guys have never eaten a good tuna noodle casserole. I can still remember the very first one I ever tasted, at a Boy Scout camp out. :)

Agree on the lost me at tuna, too. Yes to ground beef or even canned or cooked chicken breast.

I'm with you, gailron, it lost me at tuna! Maybe ground beef would be better!

Sorry, this just does not sound good; not even tempted to try it.
