Serves: 4

Preparation Time: 10 min

Cooking Time: 6 min

What You'll Need:
  • 2 tablespoons butter
  • 3 cloves garlic, chopped
  • 2 cups buttermilk (see note)
  • 2/3 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (22-ounce) package frozen mashed potatoes
What To Do:
  1. Melt butter in a soup pot or Dutch oven over medium heat; add garlic, and saute 1 minute.

  2. Add buttermilk and next 3 ingredients to pot. Cook, stirring constantly, 5 minutes or until thoroughly heated. Stir in potatoes until smooth.

Notes

Buttermilk replaces some of the butter in these potatoes with outstanding results. And though buttermilk seems richer and creamier than regular milk, it actually has the same fat content as the whole, low-fat, and nonfat milks from which it is made.
