Gumdrop Cookies

What if we combine gumdrop candies with a soft, moist, melt-in-your-mouth cookie? That’s easy! You get lots of smiles and requests to make this recipe over and over again.

Ingredients
  • 1 (18.5-ounce) package yellow cake mix
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 cup coarsely chopped gumdrops
Instructions
  1. Preheat the oven to 350 degrees F. Coat cookie sheets with nonstick cooking spray.
     
  2. In a large bowl, combine the cake mix, oil, and eggs; beat with an electric beater for 1 to 2 minutes, until well blended. With a spoon, stir in the chopped gumdrops and drop by teaspoonfuls 2 inches apart onto cookies sheets.
     
  3. Bake for 12 to 14 minutes, or until the cookies are firm. Remove the cookies to a wire rack to cool completely.

Makes about 3 dozen cookies

Tip

For even more colorful cookies, add additional chopped gumdrops to the tops of the cookies before baking.
