What You'll Need

  • 1 pound new baby potatoes (about 12)
  • 1 onion, peeled and cut into 1-inch chunks
  • 1 pound carrots, peeled and cut into 2-inch chunks
  • 1 (3-pound) beef brisket, trimmed
  • 1 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1 (15-ounce) can tomato sauce
  • 1 cup brewed black coffee
  • 1/4 cup Worcestershire sauce
  • 1/2 cup light brown sugar

Slow Cooker Brisket Instructions:

  1. In a 6-quart slow cooker, place the potatoes, onion, and carrots. Sprinkle beef with salt and pepper and place over vegetables.
  2. In a medium bowl, combine tomato sauce, coffee, Worcestershire sauce, and brown sugar; pour over beef and vegetables.
  3. Cover and cook on low 8 to 9 hours, or until beef is fork-tender. Slice beef across grain; serve with vegetables and sauce.

I have a Cuisinart slow cooker and the brisket was not cooked to the point of falling apart? Cooked all day (well over 8 hrs) Has anyone else commented that this brand of slow cooker does not cook as fast maybe due to the thick porcelain container?

May I use this recipe in the oven instead and if so how long and at what temperature.

Hi there! Yes, you can make this recipe in the oven. The Test Kitchen says that you can cover and bake a 3 pound beef brisket in the oven at 350 degrees F for 2.5-3 hours. Enjoy!

Made this using beef broth instead of the coffee because I only have flavored coffee and somehow Vanilla flavored beef brisket just didn't sound very appealing. It was very good and the meat was quite tender. I would add a touch more salt next time ( I cut it down because I was using beef broth).

what does "trimmed" mean for the brisket.. all the fat removed? where I buy brisket is the "flat cut" and has a layer of fat on one side

"Trimmed" means market trimmed. Excess fat may have been trimmed, but there is still fat. You don't need to cut off any more. Sometimes you may see brisket sold as "packer trimmed" which is the rough cut from the carcass.

is there something i could use in place of coffee ? there is never any coffee in my house...

We made this for Easter dinner and the whole family loved it.

on my recipe it says 1/2 cup light something but don't know what it is seems to be leaving some of the ingredients out such as 1 cup brewed

The last ingredient is 1/2 cup light brown sugar.
