Everybody loves cheesecake, and this one's no exception. And what makes this cheesecake better than the rest is that it's in individual portions so everybody gets their own mini blueberry cheesecake!

What You'll Need

  • 14 vanilla wafers
  • 1 (8-ounce) package cream cheese, softened
  • 1 (14-ounce) can sweetened condensed milk
  • 1/3 cup lemon juice from concentrate
  • 1 1/4 cup fresh blueberries

What to Do

  1. Place 12 paper cupcake liners in a muffin pan. Place 1 vanilla wafer in each liner. Crumble remaining 2 wafers into a small bowl; set aside.
     
  2. In a medium bowl, with an electric mixer, beat cream cheese until smooth. Gradually beat in sweetened condensed milk. Add lemon juice; stir until mixture starts to thicken.
     
  3. Set aside 12 large blueberries; fold remaining blueberries into cream cheese mixture. Spoon mixture into cupcake liners. Top each with reserved wafer crumbs and a large blueberry. Cover loosely with waxed paper, and chill at least 2 hours before serving.

I am always hosting one event or another and I like to prepare foods that are easy to serve. This blueberry cheesecake minis is a perfect recipe because it is served in its own little "dessert" cup. I may have to double the recipe or make a different version using a different fruit.

I wish I could answer your question with certainty Bev04 but your event has probably already occurred. But I would think freezing the dessert in the cup would be acceptable. My cousin is a baker and from time to time she will freeze a layer cake without any detriment to the cake but I would not want to keep it there long. The vanilla wafer may loose something in the thaw.

Can you freeze these cheesecakes before adding wafer crumbs and blueberry? I need to make a huge quantity of small desserts before a wedding reception and need to make things I can freeze because I have another wedding the week before.
