Quick and Easy Macaroni and Cheese

There's nothing like homemade macaroni and cheese, and this easy comfort food favorite is the best way we know to make your family and company feel welcome.

What You'll Need:
  • 8 ounces large elbow macaroni, cooked
  • 1 (8-ounce) package shredded sharp Cheddar cheese
  • 1 (10-3/4-ounce) can cream of mushroom soup, undiluted
  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 1/2 cup homemade soft, coarse bread crumbs, made from French bread, lightly toasted (see Notes)
  • 1 tablespoon butter, melted
What To Do:
  1. Preheat oven to 375 degrees F. Stir together first 5 ingredients in a lightly greased broiler-proof 2-quart baking dish.
     
  2. Bake 22 to 25 minutes, or until bubbly. Set oven to Broil. Stir together bread crumbs and butter; sprinkle over casserole. Broil 5-1/2" from heat for 45 seconds to 1 minute, or until lightly browned.
Notes
  • To make homemade bread crumbs, process bread slices in a food processor or blender. It takes about 2 slices of bread to make 1 cup of soft bread crumbs.
     
  • You can easily lighten up this recipe by substituting a few ingredients: Use reduced-fat sharp Cheddar cheese, reduced-fat cream of mushroom soup, light mayonnaise, and fat-free milk.

1 cup of macaroni will make 2 cups of cooked

I measure foods by the cup & spoon. What is 8 oz of macaroni, 1 cup - 2 cups? Doesn't seem like 1 cup uncooked macaroni would feed 6 people.

Hello! 8-ounces of macaroni should be about half of a 16-ounce box. There are some boxes that come in 6-8-ounce boxes in which case you'd use the whole box. This would be about 3-4 cups of uncooked macaroni. Enjoy!

I just made this dish for our dinner... Excellent!! I added a little more cheese and more bread crumbs but would still have been great without adding the extras. Can't wait to have this dish again!

All nutrition info would be extremely helpful.

It would really be helpful if you listed the calorie content.

You can figure out the calorie content for your self...it's not that hard. Don't worry about it....it's comfort food after all!! Just enjoy....

I did a rough calculation just now - for 1/6 of the above recipe, made exactly as listed, it is 440 calories. If you sub out the real Mayo for Light mayo (90 cals vs 35 cals/Tbs) you can cut the calories down to 366 per serving. Even if you use a yogurt you are not going to cut the Mayo hit much more than that. The only other place I can see to cut may be the full-fat Cheese to fat free (save 43 more calories per serving) but I don't know how that stuff would set up in the final product.

Why do you use the large macaroni?

This is really about the BEST mac n cheese that I have EVER had!
