Spicy Chicken 'n' Pasta

Shake up your supper lineup with our Spicy Chicken 'n' Pasta. If you want to make it tongue-tingling spicy, use hot salsa instead.

Serves: 4

Preparation Time: 5 min

Cooking Time: 8 min

What You'll Need:
  • 3 tablespoons olive oil
  • 3 celery ribs, chopped
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 pound skinned and boned chicken breast halves, cubed
  • 1 (16-ounce) jar medium salsa (see headnote)
  • 1/2 teaspoon salt
  • 8 ounces penne pasta, cooked
What To Do:
  1. Heat olive oil in a large saucepan over medium-high heat. Add celery and next 3 ingredients, saute 3 to 4 minutes or until vegetables are crisp-tender.
     
  2. Add chicken, and cook 3 to 4 minutes or until done, stirring often.
     
  3. Stir in salsa and salt; bring to a boil. Reduce heat, and simmer 2 minutes or until thickened, stirring often. Serve over penne pasta.
