Corpus Christi Turkey Loaf

Corpus Christi Turkey Loaf

1 Hr

A fan from Corpus Christi, Texas, sent us this zippy turkey loaf recipe. She says it's popular in her Southwestern city...and we have a feeling its popularity is about to spread!

What You'll Need

  • 1 1/2 pound ground turkey (see Note)
  • 1 egg, beaten
  • 3/4 cup salsa, divided
  • 1 (4 ounce) can chopped green chilies, drained
  • 1/2 cup (2 ounces) shredded Monterey Jack cheese
  • 1/2 cup dry bread crumbs
  • 1 (1 ¼ ounce) package dry taco seasoning mix

What to Do

  1. Preheat oven to 350 degrees F.
  2. In a medium-sized bowl, combine all ingredients except 1/4 cup salsa; mix well. Press mixture into a 9- x 5-inch loaf pan.
  3. Spread remaining 1/4 cup salsa evenly over top and bake 55 to 60 minutes, or until juices run clear and no pink remains. Drain off excess liquid. Allow to sit 5 minutes before slicing and serving.

Ground turkey creates a moister loaf than ground turkey breast (which is very lean), but use whichever you prefer.

Also good wrapped in tortilla's and used as turkey burrito's. Yummy.
