Turkey and Gravy for Two

Whether you're looking for a Thanksgiving meal solution for two, or you just want that homestyle taste any time of year, this Turkey & Gravy for Two is a winner indeed!

What You'll Need

  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 boneless, skinless turkey cutlets (12 ounces total)
  • 1 cup turkey gravy (bottled or homemade)

What to Do

  1. In a shallow dish, combine flour, salt, and pepper; mix well.
     
  2. In a large skillet over medium-high heat, heat olive oil and butter. Dip turkey cutlets in flour mixture, coating completely.
     
  3. Saute turkey 2 to 3 minutes on each side, or until golden. Add gravy and simmer 5 minutes or until turkey is cooked through. Serve turkey topped with gravy.

This is such a great standard dish to serve on a busy weeknight, and is really great for seniors who live alone - cook once and eat twice! You could serve one with mashed potatoes and stuffing the first night, and then reheat the rest for a delicious open faced hot turkey sandwich for lunch the next day.

I would remove the cutletst and add some chopped onion , lightly satue, add some flour, cook for I minute, add some sherry and water and a bit of gravy master to make my own sauce and then simmer the cutlets in that instead of bottled gravy. Its a little more work but it improves the flavor and makes it a truly homemade dinner.

so quick easy and very good! been using chicken breasts and "southeastern mills" gravy mix,my favorite) go to gravy.
