Island Turkey Supper

Capture the taste of the Caribbean with this easy "throw-together." There are many good brands of precooked turkey available in the markets now, so you don't even have to roast a turkey if you don't want to. But you know those leftover turkey scraps that we can hardly do anything with? They sure turn out perfect this way.

What You'll Need

  • 3 cups cooked white rice
  • 1 teaspoon curry powder
  • 2 cups diced cooked turkey
  • 2 tablespoons finely chopped onion
  • 6 to 8 stuffed green olives, sliced
  • 1 (10-3/4 ounce) can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup (2 ounces) shredded Cheddar cheese

What to Do

  1. Preheat oven to 350 degrees F
     
  2. Mix rice and curry powder, and spread over bottom of a greased 9-inch square baking dish. Cover evenly with turkey, onion, and olives.
     
  3. Combine soup and milk; pour over turkey mixture. Top with cheese.
     
  4. Bake 25 to 30 minutes until cheese is melted.
