This is not your grandmother's mushroom soup recipe! Our Brie Mushroom Soup will take your taste buds to a whole new level. The rich elegance of brie makes this mushroom soup a standout!

What You'll Need

  • 1/4 cup (1/2 stick) butter, melted
  • 1/4 cup all-purpose flour
  • 3 1/2 cups chicken broth
  • 1/2 pound cremini mushrooms, trimmed and thinly sliced
  • 1/2 pound shiitake mushrooms, trimmed and thinly sliced
  • 1 onion, diced
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 8 ounces Brie cheese, skin removed, cut into 1/2-inch chunks

What to Do

  1. In a small bowl, combine melted butter and flour; blend until smooth then set aside.
     
  2. In a soup pot, combine the chicken broth, cremini and shiitake mushrooms, onion, and black pepper; bring to a boil over high heat. Reduce heat to low, cover, and simmer 20 to 25 minutes, or until mushrooms are tender.
     
  3. Add butter mixture, stirring until soup is thickened. Slowly stir in heavy cream, mixing well (see Tip). Add cheese, stirring constantly, until melted. Serve immediately.

 

Notes

  • Preparation Tip: Heat this and any cream soup slowly. Never let it come to a boil because that may cause it to separate.

I would use a full level tea of pepper with 1/4 tea of salt.

The only thing I would change is the butter/flour mixture. I would just add these ingredients separately instead of making a paste with them. It definitely made the process a little more trouble than it needed to be. Other than that it's not bad.

I just made this soup trying to mimic one that I had at a restaurant in my area, and it wasn't quite the same but was still delicious. I doubled the amount of chicken broth that was asked for to make the consistency less thick. Overall it was a quick and great tasting soup!

This was good, but a little bland for my taste. It needs something for a little more kick. I disagree with the last reviewer's opinion that it was too spicy, but then this was intended as a mom and dad dish only. I didn't think the kids would like it. I may make it again, it was good.

WONDERFUL SOUP and Very easy to make !! ( I would CUT the Black pepper in Half the Next time ) A little Spicy for me & the Family !!! A KEEPER : )
