Whimsical and scrumptious, our eye-catching easy Easter Bunny Cake will probably become one of your go-to Easter recipes every year. This Easter dessert will surely take the cake.

What You'll Need

  • 1 (16.5-ounce) package white cake mix, batter prepared according to package directions
  • 2 (16-ounce) cans white frosting
  • 1 cup flaked coconut
  • 2 drops red food color
  • 3 jelly beans
  • 1 (0.68-ounce) tube black decorating gel, or your favorite color

What to Do

  1. Bake cake mix according to package directions for one 8-inch round baking pan and one 8-inch square baking pan. Make sure batter is divided equally so layers are same height. Let cool slightly then remove to a wire rack to cool completely.
  2. Place round cake layer on a large platter.
  3. Cut 2 semi-circles out of square layer on two opposite sides, leaving a bow-tie shape. Place cut pieces of cake on platter, forming ears. Place remaining piece of cake at bottom of round cake, forming a bow-tie (see photo). Frost entire cake with frosting.
  4. In a medium bowl, combine coconut and food color, stirring until coconut turns pink. Place coconut inside ears and around sides of cake.
  5. Place jelly beans to make eyes and nose. Use gel to make whiskers, mouth, and center of bow-tie.
  6. Serve, or cover loosely until ready to serve.

when I make my bunny cake I use 2 round cake pans. use 1 of the cakes for the face. to make the ears: cut off both sides of the second cake --making sure they are the same size (be sure to cut in a circular motion so the bunny doesn't have squared-off ears). Use the middle of the second cake as the bow tie. Decorate with coconut, jelly beans. Cut strips of black licorice for the whiskers. Use your imagination & have a blessed Easter!

I too use 2 round cakes.

This is a BAD bunny cake! You put white coconut over ALL of it, makes it fuzzy, like a real bunny. And you are supposed to curve the ears when you cut them, the left over cake makes the bowtie, and you don't want a square bow tie. I have been making these cakes with my mom since I was 5, and I'm sorry but this looks HORRIBLE! Also, don't use cherries, use jelly beans. Cherries make bunny look demnted.

This was such splendid idea. I love it and will try it for Easter. "OOH IT'S SO GOOD" has always been a favorite of mine.
