Can you make it without the Vanilla Extract, as I understand there is alcohol in Vanilla Extract and I'm planning on serving it to a recovering alcoholic?

I am sure 1 teaspoon of vanilla will not be missed but on the other hand 1 teaspoon of vanilla dispersed through 2 1/2 cups of frosting will have no detrimental effect on a recovering alcoholic. It is good of you to be that concerned for them though.
