This Peachy Keen Icebox Cake is just the dessert you need for the summer! It's a no-bake cake made with just five ingredients. With the creamy filling, the graham crackers that soak up all the goodness, and the juicy peaches, get ready for everyone to ask you to make this all summer long!

What You'll Need

  • 2 (4-serving size) packages instant vanilla pudding mix
  • 3 cups milk
  • 1 (29-ounce) can peach slices, drained, with 1/2 cup liquid reserved
  • 1 (16-ounce) container frozen whipped topping, thawed
  • 12 graham cracker sheets (32 cookies)

What to Do

  1. In a large bowl, whisk pudding mix, milk, and 1/2 cup reserved peach liquid until slightly thickened. Stir in whipped topping until well combined; set aside.
  2. Lay half the graham crackers in a 9- x 13-inch baking dish. Gently spread one-third pudding mixture over graham crackers. Top with a layer of half the peach slices, and another one-third of pudding mixture. Repeat with another layer of graham crackers, pudding mixture, and peaches.
  3. Refrigerate 4 hours, or until ready to serve.

I will make this. I love COOL desserts. When I was a little girl my aunt made something similar and I think about it all the time. (I am now 77 and still remember the wonderful dessert) My mouth drooled when I read this recipe. I will try it this way with the added comments and then another way incorporating cream cheese somewhere.

I would like to try this with broken ginger snaps or another plain cookie.

I would give this a minus 5 if I could. It is the nastiest thing I believe that I have ever made. First, with all that whipped topping and pudding mix, the pan was overflowing with only two layers of the graham crackers. The one can of peaches do not provide enough peaches to even cover the pan with one layer. When you eat it, all you get is a mouth full of soggy crackers and gooey Cool Whip-Pudding. The recipe has already gone in the trash and the cake is going down the garbage disposal.

Hi there! The Test Kitchen recommends double checking that your peaches are drained on a paper towel and patted dry. We also recommend using 2 cups of whole milk rather than 3, along with the reserved juice, to get a thicker end product. Finally, we wanted to make sure that you used whole milk and regular frozen whipped topping so that the fat can be used to stabilize this cake. Enjoy!

When a recipe calls for MILK it is whole milk. If it was less than whole milk the recipe would state that. The same for cool whip or whatever. Also, when a recipe calls for eggs, the eggs are large eggs, Not small or extra large. (even tho this recipe DOES NOT CALL FOR EGGS) Just through that in because lots of people don't know about the eggs. But I am glad Test Kitchen mentioned lessening the milk and draining the peaches that way. THANKS GUYS!!! Also, where DID you recommend using only 2 c. of milk? Maybe you should go back and redo the recipe to state the two things I mentioned?? BUt I AM GOING TO MAKE THIS
